One of the first to be cultivated in Crete in around 3500BCE. The Olive tree has many symbolic associations: as an emblem of peace and the leaves crowning victors in ancient Olympic games. 

Olive leaves lower blood pressure and help to improve the function of circulatory system. They are also mildly diuretic and may be used to treat conditions such as cystitis. Clinical trials have shown that Olive leaf lowers blood pressure and have some ability in lowering blood sugar levels.

Foeniculum vulgare (Apiaceae)

Dioscorides, in the 1st century CE, stated that "the juice when put into the eye, aids vision, and into the ear, kills the worms (i.e. bacteria) that develop there".

Today the primary use for fennel seeds is to settle stomach pain and relieve bloating. An infusion of the seeds can be taken as a gargle for sore throats and is mildly expectorant. Safe to use for babies in low doses for colic and teething issues. Fennel also increases breast milk production and has oestrogenic activity which may support menopausal symptoms.

Skullcap is technically a mint, but it doesn’t have that typical lemony menthol blast. The taste is more bitter, more astringent, less aromatic. Skullcap roots are a useful antihistamine; Herbalists have often used them to treat asthma and allergies, sooth the nerves and reduce inflammation. There’s even some evidence that Skullcap can alleviate the symptoms of diabetes. Just keep in mind, Skullcap has a pretty potent flavour:

This unique fermented tea is traditionally made in China’s Yunnan province, and is believed to have been consumed for almost 5000 years. Pu-erh is said to introduce beneficial bacteria and probiotics into the gut, while encouraging blood sugar control, curbing hunger, and assisting in weight management. Ripe Pu-erh tea undergoes a “wet piling” process, making the nuggets palatable and smooth. The result is a sweet and florally tea with earthy undertones that some describe as woody.
